As a backpacker it’s challenging to find cheap food that’s delicious and healthy at the same time. Thanks to some fellow travelers, Sarah and George, we discovered the next level of banana pancakes. For these pancakes you only need eggs, bananas and oats!

This morning we just walked to the beautiful market of San Pedro La Laguna, got the ingredients for €1,5 and made these amazing pancakes for our Couchsurfers from Taiwan and Italy. They loved it!

Recipe Makes 10 pancakes

Ingredients

6 bananas

6 eggs

2 cups of oats

butter or oil

optional: cinnamon and raisins

 

Step 1: Soak the raisins in a cup of water for 10 minutes

Step 2: Mash the bananas and mix with the eggs, the oats, some cinnamon and drained raisins. If needed at more oats.

Step 3: You could add other types of fruit like strawberries or peaches, or even other kinds of dried fruit. I haven’t tried it yet, so please let me know the result.

Step 4: Melt a teaspoon of butter in a frying pan.

Step 5: Add 3 tablespoons of batter

Step 6: Flip your pancake when it get’s bubbly on top

Step 7: Serve with Honey, Cream cheese, Nutella,… or just enjoy the simple delicious banana flavor.
